No-Bake Sweet Treat

My kind of treat!!!

Ingredients:

  • 1 and 1/2 cups old fashioned oats

  • 1/2 cup creamy peanut butter

  • 1/4 cup honey

  • 1/2 cup mini chocolate chips 

  • pinch of salt 

  • 12 oz bag of (dark) chocolate chips 

  • optional: sprinkles or nuts

Directions:

Combine all the ingredients except for the 12 oz bag of chocolate chips in a bowl until well combined. Using a small ice cream scoop and wet hands, roll mixture into balls.  Should make 12-15 balls. Place them onto a baking sheet lined with parchment paper. Then put the cookie sheet the fridge to chill for 2 hrs.  

After the balls have chilled, melt the 12 oz bag of chocolate chips in a microwave safe bowl stirring every 30 seconds until fully melted.  Dip your energy balls into the melted chocolate until covered. Then you can put fun sprinkles or yummy nuts on them too.  Place back onto the parchment- lined baking sheet and into the fridge for another 25-30 minutes. ENJOY!!!!

You can keep them in the fridge for up to 5 days (IF they make it that long - my family gobbled these up!!).  

We made these for a Valentines treat, but to be honest, I love that you can be festive with the different sprinkles and use for any occasion or holiday. My kids were able to help make them too, which is always an added bonus for the both of us.
